Herb-roasted vegetables with lemon & olive oil

Kidney-friendly roasted vegetables with fresh herbs and a light lemon dressing — full of flavour while being gentle on sodium and phosphorus. This is proof that eating for kidney health doesn't mean eating less — it means eating smarter, with more herbs, more colour, and more care.

Preheat your oven to 200°C / 180°C fan / Gas 6. Line a large roasting tin (or two medium ones) with baking paper — a crowded pan will steam rather than roast, so give the vegetables space.

In a large bowl, whisk together the olive oil, lemon zest, half the lemon juice, garlic and dried oregano. Season generously with black pepper.

Add all the vegetables to the bowl and toss well until everything is evenly coated. Scatter the fresh thyme and rosemary sprigs over the top.

Spread the vegetables in a single layer across the roasting tin(s). Roast for 35–40 minutes, turning once halfway through, until golden at the edges and tender throughout.

Remove from the oven. Squeeze over the remaining lemon juice and scatter with fresh parsley. Taste and adjust seasoning — lemon juice can do the work of salt here beautifully.

Serve warm as a side or over rice, with crusty bread to mop up the herby, lemony juices. Leftovers keep well in the fridge for up to 3 days and are wonderful cold in salads.
