A vibrant probiotic drink inspired by traditional fermentation — supporting the gut microbiome and giving a natural, gentle lift to your energy. This is a slow food for a fast-paced world: just 15 minutes to prepare, then nature does the rest over 3 days.
Sterilise your glass jar by rinsing it with boiling water and leaving it to air dry — do not use soap, as residue can inhibit fermentation.
Add the cubed beetroot and sliced ginger to the jar. Stir the salt into the filtered water until dissolved, then pour over the beetroot — it should be fully submerged. Leave a couple of centimetres of headspace at the top.
Cover loosely with a clean cloth or a lid left slightly ajar (the fermentation process produces CO₂ which needs to escape). Place on a plate to catch any overflow.
Leave at room temperature (18–22°C is ideal) for 2–3 days. You should see small bubbles forming — this is the fermentation working. Taste from day 2: it should be pleasantly tangy and earthy. The longer it ferments, the more sour it becomes.
Once fermented to your taste, strain the liquid through a fine sieve into a clean bottle or jar. Discard the solids (or add them to salads — they're delicious). If desired, add a squeeze of lemon and a little raw honey.
Store in the fridge for up to 2 weeks. Drink 50–100ml per day as a daily tonic — first thing in the morning or before meals is traditional.
