Chia seeds are one of the most effective blood sugar stabilising foods — high in soluble fibre that slows glucose absorption, plus healthy fats that keep you full for hours. Combined with cinnamon (which has clinical evidence for improving insulin sensitivity) and walnuts, this is a breakfast specifically designed to avoid the energy crashes that destabilise blood sugar throughout the day.
Combine chia seeds, almond milk, cinnamon, vanilla and sweetener (if using) in a jar or bowl. Stir well to combine.
Leave to sit for 5 minutes, then stir again to prevent clumping.
Cover and refrigerate overnight, or for a minimum of 4 hours.
In the morning, give the pudding a good stir. If it's too thick, add a splash more almond milk.
Top with blueberries, walnuts and an extra dusting of cinnamon. Serve immediately.
Why this recipe works
Chia seeds are approximately 40% fibre by weight — almost all of it soluble fibre, which forms a gel in the digestive tract and significantly slows the absorption of glucose into the bloodstream. This prevents the sharp blood sugar spike (and subsequent crash) that comes from eating simple carbohydrates without fibre or protein. Cinnamon contains active compounds called cinnamaldehydes that have been shown in clinical trials to improve insulin sensitivity and reduce fasting blood glucose levels. Walnuts add omega-3 fatty acids, which have anti-inflammatory benefits and further support metabolic health. Together, this is one of the most evidence-backed breakfasts for anyone managing blood sugar, insulin resistance, or energy fluctuations.
